I am down to 2 homeschoolers this year! Annalee will be a HS Senior and Gabe will be a HS Sophomore... wow, time flies!

Gabe just finished his Drivers' Ed course through FLVS and is the last of the kiddos to get his permit. Now, onto driving on the road- God, help me!

Noah's Birthday

Noah turned 12 on December 5th! We got to celebrate with Andy's mother this year, and she was more than happy to make Noah's birthday dinner of chicken and dumplings- his request. Elena and I made the birthday cake- white cake with cream cheese frosting :) Noah also chose to get chocolate and vanilla ice cream.





Noah got an account on the online game "Minecraft" for his birthday. It's a really neat game where you can build anything (under creative mode) or try to survive by finding food and shelter (under survival mode). There are monsters, animals and villagers to interact with, too! The kids really seem to get into it.

Here's Noah enjoying his birthday dinner. Grandmom's dumplings are wonderful- it's one of Noah's favorite meals, and I have tried to perfect it for many years.... I am getting closer every time!





Here's wishing Noah a very happy 12th birthday!! Wow. Next year I'll have a teenager... he's already been asking Andy to teach him how to drive- eek!

Noah's Apple Pie

We were excited about finding organic apples at Publix last week... only to find out that they were too sour and fibrous to eat. Noah enjoys Granny Smith apples, but these were not up to par. So, we decided to bake them in a pie! Noah found a recipe in an old cookbook, and we got those apples tasting good!



Here's Noah with his masterpiece :) He even made his own crust! Here's the recipe:

Filling:
5-7 tart apples
3/4 c sugar
2T flour
dash of salt
1t cinnamon
1/4 t nutmeg
1/3 c butter

Peel and slice apples thin, then mix thoroughly with other ingredients, excluding butter.

Crust:
1 1/2 c flour
1/2 c butter, softened
1/2 t baking powder
1/4 t salt
1 egg and enough milk to make 1/4 c

Mix dry ingredients, then cut in butter. Add liquid and mix until soft. (You may have to mix with hands)

Pre-heat oven to 400 degrees.
Roll out to 1/8" thickness and press into an 8"x11" glass pan.
Pour apple mixture into crust and top with pats of reserved butter.
Arrange strips of crust on top of filling.
Bake for 50 minutes.





Noah got creative with the top crust! Here's the pie before popping it into the oven...






And, here's the finished pie! It was just sweet enough, and the texture was nice. His crust was flaky and delicious :)


If you ever get a batch of sour apples, this is definitely one way to make them edible! Oh, and top with a dollop of whipped cream to make it even better :)
