I am down to 2 homeschoolers this year! Annalee will be a HS Senior and Gabe will be a HS Sophomore... wow, time flies!

Gabe just finished his Drivers' Ed course through FLVS and is the last of the kiddos to get his permit. Now, onto driving on the road- God, help me!

Noah's Apple Pie

We were excited about finding organic apples at Publix last week... only to find out that they were too sour and fibrous to eat. Noah enjoys Granny Smith apples, but these were not up to par. So, we decided to bake them in a pie! Noah found a recipe in an old cookbook, and we got those apples tasting good!



Here's Noah with his masterpiece :) He even made his own crust! Here's the recipe:

Filling:
5-7 tart apples
3/4 c sugar
2T flour
dash of salt
1t cinnamon
1/4 t nutmeg
1/3 c butter

Peel and slice apples thin, then mix thoroughly with other ingredients, excluding butter.

Crust:
1 1/2 c flour
1/2 c butter, softened
1/2 t baking powder
1/4 t salt
1 egg and enough milk to make 1/4 c

Mix dry ingredients, then cut in butter. Add liquid and mix until soft. (You may have to mix with hands)

Pre-heat oven to 400 degrees.
Roll out to 1/8" thickness and press into an 8"x11" glass pan.
Pour apple mixture into crust and top with pats of reserved butter.
Arrange strips of crust on top of filling.
Bake for 50 minutes.





Noah got creative with the top crust! Here's the pie before popping it into the oven...






And, here's the finished pie! It was just sweet enough, and the texture was nice. His crust was flaky and delicious :)


If you ever get a batch of sour apples, this is definitely one way to make them edible! Oh, and top with a dollop of whipped cream to make it even better :)
